Prosciutto, Fetta & Peach Salad

Ingredients
  • 200g fetta cheese marinated in oil
  • 2tablespoons balsamic vinegar
  • 4 slices prosciutto
  • 100g rocket
  • 4small peaches, halved and de-stoned,cut into wedges
  • 25g walnuts

4 servings

10 minutes preparation.

5 minutes cooking

  1. Grill the prosciutto until crisp.
  2. Break it into pieces.
  3. Combine oil from feta with balsamic vinegar for dressing.
  4. Toss prosciutto with rocket, add peaches.
  5. Crumble feta cheese and drizzle with dressing.
  6. top with walnuts.
