Ingredients
  • 3/4 cup plain chocolate biscuit crumbs
  • 2 tablespoons walnuts, finely chopped
  • 2 tablespoons butter, melted
  • 1 cup strawberries, frozen
  • 500g block cream cheese, softened
  • 3/4 cup caster sugar
  • 3/4 cup sour cream
  • 1/4 cup lemon juice
  • 2 tbsp plain flour
  • 1 tbsp lemon rind, grated
  • 3 eggs, lightly beaten

Strawberry Cheesecake

  1. Combine biscuit crumbs, chopped walnuts and melted butter in a bowl until combined. Press mixture into the base of a 22cm spring form pan and chill in the fridge. Defrost strawberries in a bowl and reserve.
  2. Preheat oven at 140°C for 10 minutes.
  3. Use an electric beater to beat the cream cheese until smooth. Add caster sugar, sour cream, lemon juice, flour, lemon rind and eggs. Beat well until smooth.
  4. Pour mixture into the prepared crumb crust and bake in the preheated oven for 60 minutes. Turn the oven off and allow the cheesecake to cool in the oven. Place cheesecake into the refrigerator and chill for 2 hours.
  5. Decorate top with strawberries and enjoy.
