Spinach & Fetta Frittata

A golden, cheesy frittata packed with spinach and three cheeses — simple, hearty, and budget-friendly.

Ingredients

  • 9 eggs (large)
  • 3 spring onions, chopped
  • 2 tablespoons wholemeal plain flour
  • 1 bag frozen spinach (defrosted & drained)
  • 1 Riverina Dairy Greek style Fetta block 200g
  • 1/2 cup grated mozzarella
  • 1/2 cup grated cheddar
  • 1/2 teaspoon salt
  • 1 teaspoon cracked black pepper (to taste!)

Spinach & Fetta Frittata

Step 1. Preheat oven: Preheat your oven to 180°C fan forced. Grease a 20cm x 10cm baking pan or consider a dish you can take straight to the table— you can use any size, it will just change the height and cook time.

Step 2. Prep the spinach: Defrost the frozen spinach and squeeze out as much excess water as you can. This stops the frittata going soggy.

Step 3. Whisk the eggs: Crack all eggs into a large bowl and whisk well. Season generously with salt and cracked black pepper (go heavy!).

Step 4. Combine: Add chopped spring onions, wholemeal plain flour, the drained spinach, grated mozzarella, and grated cheddar to the egg mixture. Stir everything together until well combined.

Step 5. Pour the mixture into your prepared oven-proof dish or pan and spread it out evenly.

Step 6. Top with Fetta: Crumble Riverina Dairy Greek Style Fetta over the top — don’t mix it in, that way it gets golden and a little crispy.

Step 7. Bake at 180°C fan forced for about 40 minutes, until the top is golden and the middle doesn’t wobble when you give the pan a gentle shake. You can cover with foil for the first half of cooking if you prefer a softer top, but leaving it uncovered gives you that beautiful golden crust.

Step 8. Rest before slicing: Leave to rest for 5–10 minutes before cutting — this helps it hold together nicely when you slice.

Notes:

Use 8 eggs for a slightly thinner frittata, or 10 for something more substantial. Great served warm or cold. Keeps well in the fridge for a few days and is brilliant for lunchboxes. Riverina Dairy Fetta works a treat here — the mild flavour means it melts into the top beautifully without overpowering. Get creative this dish is a great base, left over roasted vegetables added in, just makes the dish go further.
