Ingredients

  • 4 Eggs
  • Extra Virgin Olive Oil
  • 400g Riverina Dairy Haloumi, cut into thick slices
  • 8 slices Streaky D’orsogna Bacon, rind off
  • 4 Brioche Buns, split and toasted
  • 1 head Baby Cos, leaves separated
  • 1 large Tomato, thinly sliced
  • 2 Dill Pickles, thickly sliced
  • 3 tbs Hummus

Haloumi Bacon Burger with the lot

  1. Heat a large non-stick frying pan over medium heat.
  2. Add a little oil and gently fry eggs to a degree that makes you happy then remove them from the pan.
  3. Next, cook the bacon over medium-high until crispy and golden.
  4. Drain on paper towel (Chux), then add the haloumi and cook until golden crust forms, this may take 3-4 minutes.
  5. Flip over and cook for a further 2-3 minutes.
  6. Warm the burger buns, then place the cheese on the base and layer up with bacon, egg, tomato, pickles, lettuce and hummus.
