HOT HONEY HALOUMI COCONUT BITES

Ingredients

  • 900g Riverina Dairy Haloumi, cut into 2cm cubes
  • 2 eggs, beaten
  • 1 cup desiccated coconut 
  • 1 cup panko breadcrumbs
  • 1 tsp nigella seeds
  • 2 tsp chili flakes
  • 1/4 cup hot honey
  • Spray oil

Lime cheeks, to serve

Corriander, finely chopped to garnish

Hot Honey Haloumi Coconut Bites

Step 1. Preheat oven to 200C. Get set with a dredging station. You will need a bowl with the egg, a tray with the coconut, breadcrumbs and chili flakes mixed together and then a lined baking tray for the finished product. Start by dredging the haloumi chunks through the egg, then into the coconut mix coating all sides. Place on lined tray.

Step 2. Drizzle each haloumi bite with a little hot honey and then spray the whole tray with some spray oil. Place into the oven and bake for 20 mins or until golden and gooey.

Step 3. Serve while the cheese is still hot and bouncy. Garnish with more hot honey, coriander and lime.
