  • 180g Riverina Dairy Cyprus Style Haloumi
  • 2 ripe avocados, stone removed, peeled
  • 1 tbsp lemon juice
  • ½ tsp chilli flakes
  • 4 slices fresh bread
  • 2 tsp honey
  • Mint leaves (optional)

Smashed Avocado & Honey Haloumi

  1. Place avocados, chilli flakes and lemon juice in a medium bowl and use a fork to mash together.
  2. Slice haloumi lengthways in half to create two thin slabs. Heat frying pan to medium high and add haloumi (use a little spray oil if pan is not non-stick). Cook for 2 minutes each side until golden (on most surfaces). Slice into triangles.
  3. Toast or grill bread slices.
  4. Spread avocado mix over toast and place haloumi slices.
  5. Heat honey in a microwave for a couple of seconds to soften. Drizzle honey over haloumi and serve with a sprinkle of mint leaves (optional).
