Ingredients
- 180g Riverina Dairy Cyprus Style Haloumi
- 2 ripe avocados, stone removed, peeled
- 1 tbsp lemon juice
- ½ tsp chilli flakes
- 4 slices fresh bread
- 2 tsp honey
- Mint leaves (optional)
Smashed Avocado & Honey Haloumi
- Place avocados, chilli flakes and lemon juice in a medium bowl and use a fork to mash together.
- Slice haloumi lengthways in half to create two thin slabs. Heat frying pan to medium high and add haloumi (use a little spray oil if pan is not non-stick). Cook for 2 minutes each side until golden (on most surfaces). Slice into triangles.
- Toast or grill bread slices.
- Spread avocado mix over toast and place haloumi slices.
- Heat honey in a microwave for a couple of seconds to soften. Drizzle honey over haloumi and serve with a sprinkle of mint leaves (optional).
