Ingredients
- 100g Smooth Style Fetta, crumbled
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic
- 2 cans diced tomatoes
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried dill
- 1 teaspoon cracked pepper
- 500 grams raw shrimp, medium (thawed)
Spicy Tomato Shrimp with Fetta

- Peel and devein shrimp (tails can be left on if preferred).
- Preheat the oven to 220°C.
- Heat oil in an oven proof frying pan/skillet. Fry chopped onion for 3 minutes or until softened then add crushed garlic and cook for a further minute.
- Add the tomatoes and simmer for 5 minutes or until the sauce thickens. Remove from heat and stir in parsley, dill, pepper and shrimp. Sprinkle on fetta. Bake in oven, uncovered, for 12-15 minutes or until shrimp are cooked to your liking.
- Serve immediately with crusty bread or pasta.
