Ingredients
  • 100g Smooth Style Fetta, crumbled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic
  • 2 cans diced tomatoes
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried dill
  • 1 teaspoon cracked pepper
  • 500 grams raw shrimp, medium (thawed)

Spicy Tomato Shrimp with Fetta

    1. Peel and devein shrimp (tails can be left on if preferred).
    2. Preheat the oven to 220°C.
    3. Heat oil in an oven proof frying pan/skillet. Fry chopped onion for 3 minutes or until softened then add crushed garlic and cook for a further minute.
    4. Add the tomatoes and simmer for 5 minutes or until the sauce thickens. Remove from heat and stir in parsley, dill, pepper and shrimp. Sprinkle on fetta. Bake in oven, uncovered, for 12-15 minutes or until shrimp are cooked to your liking.
    5. Serve immediately with crusty bread or pasta.
