Ingredients – Egg Wash
- 1 tbs Milk
- 1 Egg
Ingredients – Filling
- 1 Egg
- 200g Riverina Dairy Smooth Fetta
- 70g fresh Ricotta
- ½ cup Parmesan cheese, grated
- 1 tbs fine Semolina
- Pinch of cracked Black Pepper
- Pinch of Nutmeg
- 2 sheets Puff Pastry
- Sesame seeds or poppy seeds to sprinkle on top (Optional)
Fetta Cheese Triangles
- Defrost puff pastry sheets for 10-15 minutes at room temperature.
- In a small bowl crack one egg and add the milk. Whisk together to make your egg wash and set aside.
- Using a large bowl add in your egg and whisk lightly. Add in all the cheeses, semolina black pepper and nutmeg, using a fork to break up any large pieces of cheese and mix them all together.
- Cut puff pastry sheet into 9 equal squares.
- Egg wash each corner of the puff squares to make an L shape. Fold over corner to corner to make a triangle shape.
- Add 2 teaspoons of cheese mixture and fold over. Use a fork to press down and seal the edges.
- Brush the triangles with egg wash and use your fork to poke a couple of air vents on the top.
- Sprinkle with sesame seeds/poppy seeds.
- Place in air fryer and cook for approximately 8 minutes until golden on 180°C.
